When we used to live in California, the breakfast burritos had hash browns in them which were simply irresistible. Now we've created a veganized burrito recipe that will take your morning to the next level!
The fun part about this recipe is that's completely flexible to your tastes. Want more veggies? You can add peppers, onions, mushrooms, or avocado. More proteins? Try adding some vegan breakfast sausage or bacon. Feeling cheesy? Add a slice of your favorite plant-based cheese to your burrito. The sky is the limit, have fun and enjoy!
1 package of medium firm tofu (Drained)
2 tbsp nutritional yeast
2-3 tbsp NOOCH IT! Cashew Grated Cheeze
1/4 tsp black pepper
1/4 tsp turmeric
1/4 tsp garlic powder
1/4 tsp paprika
Cayenne pepper to taste
2 tsp soy sauce (Optional or to taste)
3-4 large flour tortillas
Tofu scramble
Cucumber sliced thin strips, or other veggies of your choice. (Peppers, onions, mushrooms)
Tomatoes (Diced)
Vegan sausage or bacon (Cooked)
Potatoes: Hash browns, cut up fries, or tater tots.
NOOCH IT! Cashew Grated Cheeze
Crumble tofu with your hands into a medium pan over medium high heat.
Add all tofu scramble seasonings and cook until bubbly and hot.
Taste the scramble tofu and add any extra seasonings or salt to taste.
Warm your large flour tortilla in the microwave or on a hot skillet and place on your working surface.
Add the tofu scramble, fixings of your choice, and NOOCH IT! Roll up and place seam side down.
Serve immediately with ketchup, spicy mayo, or hot sauce (Optional)
